Fresh Seafood & Coastal Mexican Food Near Puerto Vallarta
Good food should be part of the reason you travel to Mexico.
At Corrales Bay Resort, being surrounded by the Pacific Ocean and the small fishing village of Corrales means fresh seafood and local Mexican flavors naturally find their way onto the table.
Our on-site Restaurant focuses on fresh ingredients, seafood, and elevated takes on traditional Mexican dishes—all served just steps from the water.
For travelers searching for fresh seafood near Puerto Vallarta or a place to experience coastal Mexican food in Jalisco, dining at Corrales Bay is very much part of the stay.
Fresh Seafood Straight From the Pacific
It does not get much more local than fish caught the same morning you eat it.
Travel writer Kirsten Raccuia experienced exactly that during her stay with us. In her Corrales Bay Resort review for Sand In My Curls, she shared how she ordered our fresh fish zarandeado a day ahead so a fish could be caught fresh the following morning.
The result was grilled fish served alongside homemade tortillas, rice, fresh salsa, and salad.
Pescado zarandeado is a favorite along Mexico’s Pacific coast, traditionally prepared over the grill with chiles, citrus, garlic, and other seasonings. It is simple, fresh, and exactly the kind of meal that belongs next to the ocean.
More Than Just Fresh Fish
Seafood may be one of the stars, but there is plenty more coming out of the kitchen.
Kirsten also highlighted the guacamole topped with tuna chicharrón, grilled vegetables with shrimp, and shrimp pastor during her stay.
The approach is not about creating an enormous menu. It is about using fresh ingredients and Mexican flavors to make food that fits the setting.
Our own Things to Know Before Your Stay page describes the cuisine as ranging from fine dining to elevated traditional Mexican dishes prepared with local ingredients.
Breakfast can be just as memorable as dinner, with dishes like chilaquiles, breakfast tacos, eggs, avocado, and fresh produce giving guests plenty of reason to start the morning around the table.
Dining With an Ocean View
Of course, where you eat matters too.
Meals at Corrales Bay come with panoramic views of the Pacific and surrounding mountains. There is no need to rush through dinner to get somewhere else afterward.
Have another drink. Order dessert. Watch the light change over the water.
The setting is part of the meal.
That is something you simply cannot recreate inside a crowded restaurant district.
Food for Different Tastes
We also know not every guest eats the same way.
A recent verified guest review on Booking.com specifically noted how much they enjoyed the food and appreciated that our team accommodated their vegetarian diet.
Whenever possible, our team is happy to work with guests on dietary preferences and help make meals fit their stay.
Come Hungry
There are plenty of reasons to visit this part of Jalisco—the ocean, the mountains, the water activities, and the sunshine—but food deserves a place on that list.
Fresh fish caught nearby. Homemade tortillas. Mexican flavors. Cold drinks. Fresh ingredients. And dinner overlooking the Pacific.F
Sometimes the best memories from a Mexico beach vacation happen around the table.
